For checking meat temperatures, a prong or probe based thermometer usually ideal. These thermometers use a long pointed prong to pierce the meat. Digital versions can measure and display the temperature of the meat in seconds–reducing the amount of heat induced discomfort you will have to tolerate when running the grill at high temperatures.
